ANNAMARIE'S MUSHROOM RISOTTO RECIPE

  • 1 pack of Arborio rice (risotto rice)
  • 4 tablespoons of butter
  • 1 large onion, finely diced
  • 4 cups of chicken or vegetable broth, warmed
  • Pinch of saffron threads (optional)
  • 1 cup of assorted mushrooms, thinly sliced
  • 1/2 cup of grated Parmesan cheese
  • Fresh parsley, finely chopped, for garnish
  • Salt and pepper, to taste
DIRECTIONS
  1. Begin by soaking the mushrooms in water for 10 minutes to rehydrate them, infusing them with moisture and flavour.
  2. While the mushrooms soak, warm the chicken or vegetable broth in a pot, ensuring it's ready for use.
  3. In a large skillet, melt the butter over medium heat. Add the diced onion and sauté until it turns translucent, releasing its sweet aroma.
  4. Add the sliced mushrooms to the skillet and cook until they become tender and golden brown, adding depth and richness to the dish.
  5. Stir in the Arborio rice and toast it lightly until it becomes fragrant, creating a nutty flavor base for the risotto.
  6. Gradually ladle in the warm broth, one scoop at a time, stirring frequently. Allow the rice to absorb the broth before adding more, coaxing out its creamy texture.
  7. For an extra touch of luxury, dissolve a pinch of saffron threads in a bit of warm broth and add it to the risotto, imparting a golden hue and delicate floral notes.
